Guatemalan Churrascos?

I spent last summer in the region of Zacapa, Guatemala and absolutely fell in love with what they called churrascos. I've looked around online a bit and haven't found a recipe by this name that resembles what I ate there. It was a large flour tortilla with strips (or sometimes just small pieces) of beef, lots of green onions, and some type of juicelike sauce. There was an optional red chunky sauce that you could put on it, though I preferred mine without.
I know it's a long shot, but does anyone know what I'm talking about? Do you have a recipe or know anything more about Guatemalan churrascos? Thanks so much!

Churrasco refers to the way the meat was prepared, or the sauce. My wife makes churrasco beef all the time but I don't know how. You can put it on rice, on a quesadilla, or in a burrito. If you had it on a flat tortilla it was a churrasco quesadilla. The red sauce was probably chismol. Check www.epicurious.com for several different variations and adapt one to your taste.
